How Do You Make Fudge with Marshmallow Fluff and Sweetened Condensed Milk?
Prepare the chocolate by either breaking a 10-ounce milk chocolate brick into smaller pieces using a butter knife or simply use 10 ounces of chocolate chips. This step is essential to ensure the chocolate melts evenly and efficiently.
In a medium-sized microwave-safe bowl, combine the prepared chocolate with a 14-ounce can of sweetened condensed milk, 1/4 to 1/2 cup of marshmallow fluff (the fudge will be very soft if you use 1/2 cup of marshmallow fluff), and 1 teaspoon of vanilla extract. The mixture of these ingredients will create a smooth and creamy fudge base.
To melt the chocolate mixture, place the bowl in the microwave. Heat it for 90 seconds, then take it out to stir thoroughly. Continue microwaving in short intervals of 15 to 30 seconds, stirring in between, until the chocolate is completely melted. This method prevents overheating and ensures a perfectly smooth fudge consistency.
Once the chocolate is melted and the mixture is smooth, pour it into a 9×9 inch pan lined with parchment paper or aluminum foil. Allow the fudge to set and harden for approximately 60 to 90 minutes. After the allotted time, the fudge should have solidified, making it ready for cutting into neat, bite-sized squares.
Substitutions:
- Use white chocolate
- Stir in peanut butter rather than marshmallow
- Add nuts
- Add mini chocolate chips right before spreading into the pan
- Swirl marshmallow into fudge rather than mixing it in
Recipe Tips and Tricks
Quality Ingredients: Use high-quality chocolate, sweetened condensed milk, marshmallow cream, and pure vanilla extract for the best flavor and texture.
Microwaving Tips: When microwaving the ingredients, do so in short intervals and stir in between to prevent overheating and ensure that the chocolate melts smoothly without burning.
Adjusting Marshmallow Cream: Control the texture and flavor of the fudge by adjusting the amount of marshmallow cream. For a more robust marshmallow flavor, use 1/2 cup. If you prefer a firmer fudge, reduce the marshmallow cream to 1/4 cup.
Gentle Mixing: Mix the ingredients thoroughly but gently. Overmixing can cause the fudge to become tough or lose its smooth texture.
Set in the Fridge: Once poured into the pan, allow the fudge to cool and set in the refrigerator for a few hours, preferably 60-90 minutes, to achieve the desired firmness.
Cutting Technique: Use a sharp, clean knife to cut the fudge into squares. Dip the knife in hot water and dry it before each cut to get neat, clean slices.
Flavor Variations: Experiment with different extracts or add-ins to customize the flavor. Peppermint, almond, or coffee extracts can add a delightful twist, while nuts, dried fruits, or shredded coconut can introduce texture and flavor variations.
FAQ
Yes, you can use different types of chocolate, like milk, dark, or white, in microwave fudge recipes. Adjust the sweetness and flavor according to your preferences.
If the mixture seizes or becomes lumpy, it might be overheated. Stop microwaving immediately and try stirring vigorously to smooth it out. If needed, add a bit of additional liquid (like cream or butter) and mix well to revive the consistency.
Yes, nuts, dried fruits, shredded coconut, or other mix-ins can be added to microwave fudge recipes. Mix them in after the chocolate is fully melted, before pouring the mixture into the pan.
It’s advisable to make one batch at a time to ensure each batch cooks evenly. Overcrowding the microwave might cause uneven heating, resulting in inconsistent fudge.
Storage Instructions
Storing fudge properly is crucial for maintaining its taste and texture. To store fudge, begin by allowing it to cool completely at room temperature. Once cooled, cut it into individual portions. Then, place the fudge in an airtight container, separating layers with parchment paper to prevent sticking. Store the container in a cool, dry place at room temperature. Properly stored fudge can last for up to two weeks. Alternatively, for longer storage, refrigerate the fudge in an airtight container, where it can stay fresh for up to a month.
Freezing fudge is also an option. Wrap it tightly in plastic wrap or aluminum foil and store it in an airtight container or freezer bag. Fudge can remain good in the freezer for 2-3 months. When ready to enjoy the frozen fudge, allow it to thaw in the refrigerator overnight for the best texture. Avoid storing fudge in places with excessive heat or humidity, as it can cause the fudge to become too soft or sticky.

Hi there to all, as I am truly keen of reading this webpage’s post to be updated regularly.
It includes good stuff.
Vicki Struble says
Just made this tonight for my husbands Valentines Day surprise in the morning. This was so much easier than the old fashioned way I made with my mother years ago. I added chopped walnuts for an extra bite of flavor. I did get to sample it from the spatula, yum. He will love me even more when he wakes up to find this.

You will have a happy hubby today! Thank you for sharing and I hope you enjoy it!! Happy Valentines Day 🙂
Nancy Velardi says
Should I be putting this in the fridge to cool
Jodi Danen, RDN says
Hi Nancy! You can, but you do not need to. I’d love to hear how it turned out!
Jill Kiebler says
Once my fudge set, I cut into squares and then ‘frosted’ half of them with crunchy peanut butter.
Sadly, I didn’t get one piece that had the frosting. Will have to make again! Thanks for a great recipe.
Jodi Danen, RDN says
Jill – that is my kinda frosting! Love it – thank you for sharing!

love them !!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
Marlene Beyer says
Will it harden if you use gluten free chocolate ? Mine is very sticky after cooling down.
Jodi Danen, RDN says
Hi Marlene! The chocolate should not affect the hardness of the fudge, but the marshmallow would, (if there was a little bit extra or a little less chocolate per marshmallow). You could put it in the freezer to firm it up, then slice. Keep it refrigerated if it’s soft and this should help.
Ginny says
Mine turned out runny, won’t set up. What did I do wrong?
Jodi Danen, RDN says
Hi Ginny! You may have added a bit too much sweetened condensed milk or marshmallow fluff. You could try to firm it up in the freezer and see if that helps.
Lori says
Does marshmallow cream(which I bought by accident) work same as marshmallow fluff? Answer: Internet says cream will make it creamier and fluff will make it more “toothsome” (chewy?). Luckily I want creamy, so we shall see….
Jodi Danen, RDN says
Yes, I think it should work very similarly. I’d love to hear how it does turn out!
Kathy says
Can’t wait to try
Theresa says
I have tried all kinds of fudge this is the bomb it’s so easy to make and my boyfriend just loves it. I’m going to be making this more often thank you so much.
Sara says
Mine turned out very soft and sticky. I have tried putting it in fridge to harden but still really soft and sticky how can I fix it?
Jodi Danen, RDN says
Hi Sara! Sorry to hear that. If it’s very soft you can put it in the freezer to harden up in order to be able to enjoy it. Make sure you’re mixing enough of the condensed milk with the peanut butter.
Michelle Marie Walton says
i Have tried this 3 times, it never sets up.
Jodi Danen, RDN says
Hi Michelle, I’m sorry it’s not working for you. I’d try using less of the condensed milk, maybe 3/4 the amount if you’re interested in trying it again.
