Rice Pudding Recipe
Homemade rice pudding is a great cooking activity and lesson in patience for kids. Requiring up to 50 minutes on the stovetop (but SO worth it), kids learn how uncooked rice absorbs liquid and thickens with time plus the importance of stirring rice pudding often.

- 5 1/2 cups soy milk ✅
- 1/2 cup granulated sugar
- 1/2 cup long-grain rice (uncooked)
- 1/2 teaspoon salt
- 2 teaspoons vanilla extract ✅

- 1/4 teaspoon nutmeg ✅
- 1 large egg

How To Make
Bring the soy milk to a boil
To a large stockpot add the soy milk, granulated sugar, rice, and salt. Bring to a boil then turn down to low.
Simmer
Simmer the mixture for 50-60 minutes stirring often. A thin layer will develop on top as it cooks, but will stir in.
Pro Tip: Scrape the bottom of the stock pot with the spoon while stirring to prevent rice from sticking and burning to the bottom of the pot.
Add the spices
Once the mixture is nearly thickened, whisk in the vanilla, cinnamon, and nutmeg. Add the egg. Whisk over medium heat for about 2 minutes.
Serve
Serve the rice pudding hot. Garnish with your favorite toppings such as brown sugar, raisins, shredded coconut, or chopped nuts.

Yes, simply swap the 5 1/2 cups of soy milk with almond milk.
Rice pudding is traditionally made with long grain rice and is our preference as it creates a desired consistency. Our version of rice pudding is creamy, which is achieved by slowly cooking the rice to allow starches to be released.
Store leftovers up to 5 days in the fridge in an airtight container. Reheat in the microwave in 15 second increments until hot or enjoy chilled with toppings. Stir in 1-2 Tablespoons of milk when serving leftovers if desired.
This recipe calls for uncooked rice! Leftover cooked rice can be used to make rice pudding; however, the amount of milk will need to be adjusted or the dish will turn out too thin and soupy.
You can thicken rice pudding by adding a cornstarch slurry while on the stovetop. Mix 1 tablespoon of cornstarch with 1 tablespoon of water until combined in a small bowl. Pour the slurry into the pudding then heat for up to 15 minutes, stirring often, until the desired consistency is reached.
