Gluten and Dairy Free Quiche
We were a bit hesitant when first making a non dairy quiche because of our love for a cheesy center. However, this recipe did not disappoint.
Our basic quiche recipe without cheese is definitely not without flavor. The crumbled sausage seasoned with garlic, mustard, and onion creates a flavor profile that is amazing. Plus, the pop of color from the spinach makes this recipe even more appealing.
Best of all, you can customize this recipe to your liking by adding in additional vegetables such as bell peppers, mushrooms, tomatoes or yellow squash.
While possible to make a dairy free crustless quiche, we included a gluten free crust to keep this recipe heartier to feed big appetites and larger crowds.

- 1/2 pound Jimmy Dean ground sausage ✅
- 1 onion diced
- 2 cloves garlic minced
- 1 cup fresh spinach
- 1 gluten-free pie shell
- 4 large eggs
- 3/4 cup soy milk ✅
- 1 teaspoon dry mustard ✅
- 1 teaspoon salt

How To Make
Preheat the oven to 350°F.
Prep the sausage
Add the onions and sausage and cook until the sausage is browned. Add the garlic and spinach. Stir until spinach is wilted. Add to the pie shell.
Prep the egg mixture
Add the eggs, soy milk, dry mustard, and salt to a mixing bowl and whisk for 1 minute. Pour over the sausage mixture.
Bake
Bake for 50-55 minutes or until set.

Storing Dairy Free Quiche
In the fridge: Store up to 5 days in a covered container.
In the freezer: Store individual slices or the entire pie for up to 3 months. Wrap slices in plastic wrap to prevent freezer burn.
Reheating Instructions
As a reminder, quiche does not have to be reheated and makes a delicious chilled leftover meal.
Microwave: If you do desire it warm, reheat individual slices in the microwave in 30-second increments or until hot.
Oven: Place the entire pie in a 325 degree preheated oven for 15 minutes or until heated through. Cover the quiche with aluminum foil to prevent the top from becoming too crispy.
Substitutions & Variations
- Use any non dairy milk such as almond, cashew, coconut, oat instead of soy being mindful that swapping may alter the flavor of the quiche.
- Swap the ground sausage with turkey sausage, diced ham, bacon crumbles, or crumbled Italian sausage.
- Stick with spinach only or incorporate additional diced vegetables. Sauté vegetables with the sausage for best results.
- Use frozen spinach instead of fresh by microwaving until thawed then pressing all excess water out before adding to the skillet.
- Top with a dairy free cheese if craving that cheesy flavor or looking for a way to further elevate the flavors in the recipe.
- Make crustless by spraying the pie plate with nonstick cooking spray, omitting the crust and pouring the egg mixture directly into the dish.
Frequently Asked Questions
Not for quiche! Simply pour the egg mixture into a store bought or homemade pie crust and bake as directed.
Our recipe takes 50-55 minutes or until set with golden and crispy edges. All ovens cook differently so we recommend initially setting your time for 50 minutes then testing by inserting a knife or toothpick into the center of the quiche. If it comes out clean, then you are good to go. If not, continue to bake in 5-minute increments until fully cooked.

- Ask to practice knife skills by dicing the onion then add to the sausage in the skillet to cook. Watch as the onions turn from white to translucent (clear). The onions will also start to smell sweet as they cook, which adds a delicious flavor to the savory sausage.
- Brown sausage by breaking the log into smaller pieces to cook until no longer pink. Cook over low to medium heat to prevent burning. If there is excess grease in the skillet, ask for help to drain.
- Use a whisk to easily scramble the eggs in the mixing bowl with the other ingredients. If you don’t have a whisk at home, you can use a fork instead.
