Add the ground pork and the diced onions to a skillet. Cook until browned. Add the minced garlic and cook for 1 minute. Add to the slow cooker. You can add directly to the slow cooker if in a hurry, however, it will alter the texture and flavor of the soup.
Add the marinara sauce, crushed tomatoes, chicken stock, salt, parsley, oregano, basil, pepper, red pepper flakes, and the bay leaf. Stir well and cover.
Cook on low for 3-4 hours or low for 6-8 hours. 30 minutes before serving add the lasagna noodles broken into small pieces. Stir the pasta into the soup then cover and cook for 30 minutes.
In a mixing bowl combine the ricotta cheese, mozzarella cheese, and parmesan cheese blending until mixed well.
Add a dollop of the ricotta mixture to each bowl of soup or you can also mix the ricotta mixture into the soup if preferred.
