How To Make Chicken Wraps
In the bottom of the slow cooker whisk together the 1/2 cup chicken broth and 1/2 cup of Caesar dressing. Add 1.5 pounds of chicken breasts then using tongs, turn and coat the chicken. Put the lid onto the slow cooker.
Cook on high for 2 hours or low for 4 hours. Next, shred the chicken with 2 forks. Add the other 1/2 cup of Caesar dressing. If desired, you can add additional Caesar dressing to enhance the flavor or creaminess.
Once the chicken is ready to go, place a lettuce leaf onto a tortilla. This is a great step for kids to take charge. Add a couple small scroops of the chicken mixture. Next, top the Caesar chicken with parmesan cheese, tomatoes, and croutons.
Fold the ends of the tortilla in then gently roll up tightly. Repeat. Wraps can be made the night before for use in a lunchbox. For any longer, make sure to wrap fresh.
Tips and Tricks
- Make vegetarian by omitting the crockpot chicken and mixing chickpeas with the Caesar salad ingredients before stuffing into a wrap.
- Boost protein and fiber by topping the chicken with chickpeas before folding the wrap.
- Enhance the flavor by serving the wraps with a side of Caesar dressing for dipping.
- Serve warm or chilled based on preference. The chicken mixture can be added to the wrap directly from the crockpot if served immediately. However, we recommend cooling the Caesar chicken in the fridge until chilled then adding to the wrap when serving at a later time to prevent a soggy wrap.
- Use Rotisserie chicken if in a pinch and need a quick meal by shredding then mixing with Caesar dressing before incorporating into the wrap.
- Swap chicken breasts for chicken thighs or tenderloins. Boneless, skinless chicken thighs or tenderloins are two other great alternatives that can be cooked in the slow cooker then shredded.
Kids In The Kitchen
Cooking tips and suggestions for kids making this recipe.
- Adults should take charge of shredding the chicken in the crockpot for safety while kids focus on prepping the wraps with the lettuce leaves and assembling the other ingredients.
- Let kids learn how to properly fold a tortilla into a wrap by doing this step together. This can be a great learning opportunity for them! Adults can help show how folding the ends then gently rolling tightly makes the wrap easier to eat.
- Carefully encourage older kids to slice the cherry tomatoes in quarters before adding to the wraps. This will help make wraps easier to fold. Kids should wear a cut glove to practice knife safety skills in the kitchen.
