Ingredients:
- 3 pounds boneless, skinless chicken thighs
- 24 ounces petite red potatoes
- 2 cups baby carrots
- 10.5 ounce can of french onion soup
- 1 ounce packet dry ranch dressing
Can I make this recipe with chicken breasts instead of chicken thighs?
I find that boneless, skinless chicken thighs tend to be more tender and moist once cooked and are kid-approved. If you prefer, you could swap the chicken thighs for chicken breasts. If so, I recommend chopping the baby carrots and baby red potatoes in half. Otherwise, the chicken breasts will dry out before the vegetables are tender.
How to Cook:
Assemble ingredients in the crockpot. Layer the ingredients into the slow cooker in the following order:
- potatoes
- carrots
- chicken thighs
- french onion soup
- dry ranch dressing
TIP: I recommend the baby red potatoes because they are creamy once cooked and small enough so you don’t have to cut in half. If you buy large red potatoes, cut in halves or quarters to ensure they are tender.
Cook. Cook on high for 4 hours or low for 6-8 hours.

The French onion soup offers additional seasoning and flavor. It can be swapped for a can of cream of chicken soup or even 1 stick of butter.
6-8 hours on low or until the internal temperature of the chicken reaches 165°F. You will know the chicken is done cooking once it is at 165°F and the potatoes are fork-tender.
It is recommended that you do not put frozen chicken in the crockpot due to food safety concerns. Defrost the chicken prior to placing in your slow cooker. Defrost your chicken in the refrigerator or submerge into cold water (change the water every 30 minutes until defrosted).
You bet! Any other root vegetable such as parsnips, turnips, sweet potatoes, beets could be added in addition to the carrots and potatoes as desired. Before adding, chop the vegetables to be roughly the same size as the potatoes to ensure even cooking.
What to serve with
Since crockpot chicken and potatoes is a complete meal, it is not necessary to serve any other side dishes.
If you do want a larger variety of dishes on the dinner table, any vegetable or salad could be a great complement.
