October is Breast Cancer Awareness month. I’ve partnered with Shuman Farms and their Pink Ribbon Initiative to help spread awareness.

Like many of you, I have several people in my circle currently fighting breast cancer or recently in remission. Getting the word out about the importance of regular screenings is so very important as it’s easier to treat breast cancer when caught in the early stages.
Closer to home, I have a family member who had stage 0 breast cancer. Even though it has carcinoma in the name, this stage really describes a growth of abnormal but non-invasive cells forming in the lobules. She was treated with hormone therapy medication for 5 years to help prevent cancer cells from growing. Needless to say, I am a big proponent of early detection and just picked up the phone to schedule my yearly exam.

Ingredients
- 2 large Vidalia onions sliced thinly
- 1 tablespoon olive oil
- 1/2 cup water
- 4 ounces cream cheese room temperature check for gluten-free
- 1/2 cup plain Greek yogurt
- 1/4 cup mayo check for gluten-free
- 1 tablespoon Worcestershire sauce check for gluten-free
- 1/2 teaspoon dried minced onion flakes
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt and pepper
- vegetables or gluten free crackers for dipping
How To Make Onion Dip
Start by caramelizing the onions, then blend and you are ready to serve. It is the perfect recipe to share with your friends and family at your next event.
Caramelize the onions
Wondering how to make caramelized onions with an exceptional flavor? The key is Vidalia onions! As Vidalia onions cook, the sweeter they become.
In a skillet over medium high heat, add the olive oil and thinly sliced onions. Sautee for about 6 minutes until translucent. “Translucent” means you should be able to almost see right through each onion slice. Stir then add the water.
Once the water is added, turn down the heat and simmer for 30-35 minutes or until onions are browned. Stir occasionally, scraping off any fond on the bottom of the skillet to add even more flavor. Be cautious not to cook the onions on high heat to prevent burning.
Blend the dip
In a small mixing bowl, add the cream cheese, Greek yogurt, mayo, Worcestershire sauce, garlic powder, minced onion flakes, salt and pepper. Blend with a hand held mixer until ingredients are combined.
Add the onions to the dip
Carefully place caramelized onions onto a cutting board. Coarsely chop the onions then add them to the creamy dip mixture. Using a spoon, gently stir the onions in. Refrigerate the dip until serving.
Frequently Asked Questions
Low sulfur soil is one major factor, making Georgia an ideal location for growing Vidalia onions. Due to the limited growing season in Georgia, Shuman Farms has expanded to parts of Peru, Texas and Mexico to be able to offer sweet onions year round. The soil in these parts has a similar composition to the soil in Georgia making the onions just as sweet.
Pair with fresh vegetables or gluten free crackers for dipping. Serve in a bowl next to raw veggies or make a charcuterie board with this dip in the center surrounded by all crowd favorites such as carrots, cucumbers, grape tomatoes, zucchini, and celery.
Any leftover dip can be stored in the fridge in an air tight container for up to 3 days. It is a great dip to keep on hand to snack on during the week, serve as an appetizer before dinner or even pack in lunches.
