Premade camping meals are my go-to for our annual camping trip. Our trips are packed full of activities that we have limited time to spend cooking meals so I make everything before we leave. Finding quick, easy and delicious recipes is always the goal when I am thinking of camping menu ideas. This Breakfast Burrito recipe is definitely at the top of the menu list this year.
The combination of peppers, ground pork, eggs, and cheese makes this burrito tasty, nutritious and a perfect premade meal idea for a camping trip.
HOW TO MAKE A BREAKFAST BURRITO FOR CAMPING:
- In a medium pan, heat olive oil and saute peppers 3-5 minutes or until softened.
- Add ground pork and cook until browned. Drain.
- In a medium-sized pan prepared with non-stick cooking spray, add whisked eggs and cook until set, stirring often.
- Evenly distribute cooked pork, eggs, and cheese between the 8 flour tortillas
In a medium pan, heat olive oil and saute peppers 3-5 minutes or until softened.
I will often add chopped zucchini, squash, potatoes or other produce to the pan if I have extra vegetables in the fridge before we leave for the trip. It is an easy way to limit food waste in your house and boost the overall nutrition of the burrito.
Add ground pork and cook until browned.
INGREDIENT SWAP: If you prefer, you can swap the ground pork for ground turkey or beef. Make it a vegetarian camping meal by swapping the pork for beans or tofu.
Drain the bell pepper and ground pork from the pan. In a small bowl, whisk together eggs until well combined. Season with salt and pepper as desired.
KITCHEN TIP: Add cracked eggs to a mason jar prior to leaving, then simply shake for an easy and mess-free way to whisk eggs while at your campsite.

CAMPING TIP: If you are traveling to your campsite with eggs, crack the eggs at home and bring in a plastic container with a tight lid so you can pour out only what’s needed and store the rest.
Evenly distribute cooked pork, eggs, and cheese between the 8 flour tortillas. If you are traveling with a large group then I would encourage you to double the recipe – this make ahead camping meal will go quickly 🙂
Once all the ingredients have been added to the burrito, fold the tortilla.
HOW-TO FOLD A BREAKFAST BURRITO
- Wrap sides of tortilla into the middle.
- Grab the bottom of the tortilla and wrap it over the eggs and meat.
- Gently pull the egg and meat under the tortilla towards you while rolling the end of the tortilla up. This helps make a nice tight wrap for the burrito.
Wrap all of the burritos that have been folded in parchment paper and/or tin foil. Then, place in the freezer until you are ready to pack the cooler for your trip.

If you decide to make this recipe at the campsite, having the right set of tools is key.
I would suggest using the pans from a portable camping cookware set and/or a campfire griddle.
This will ensure everything is cooked to the appropriate temperatures. Once cooked, wrap each burrito in a piece of parchment paper until your campers are ready to eat.

How do you heat these up at the campsite?

Hi Katie! Wrap them in foil and heat them on the campfire grill top. Heating them over embers is easiest (rather than full flames). If you are camping with an RV you can use the microwave or even in a skillet.

Can you freeze these completely before cooking them? I’m wondering if I can make them the day before and then microwave from frozen?

Hi Elyse! Yes, you can assemble them, wrap them in parchment paper, then freeze. I have reheated them in the microwave from frozen with success – works great! I’d love to hear what you think if you give them a try.
