Ingredients
- 1 lb. raw shrimp deveined and peeled or easy peeled shrimp
- ½ lb. andouille sausage, sliced
- 1 small zucchini, sliced
- 1 medium bell pepper, sliced
- 8.8 ounce prepackaged brown rice
- 2 tablespoons Cajun seasoning
- 1 lemon, optional
- Olive oil
- Salt and pepper, to taste
MIX IT UP: Swap any of the vegetables with veggies you have on hand or family favorites.
How To Make
Preheat the oven. Preheat oven to 425° F, or preheat grill.
Add ingredients to the foil. To a large piece of heavy-duty tin foil, add rice, shrimp, sausage, zucchini, and bell pepper.
Season and seal the packet. Drizzle with olive oil. Season liberally with cajun seasoning, season with salt and pepper if desired. Roll the long side of the foil together on top and fold the sides in, sealing the foil packet shut tightly.
Cook. Cook in the oven at 425 degrees for 15 minutes or until the veggies are softened. Alternatively, you can also grill or cook over the campfire for 15-20 minutes.
Serve. Take care opening the foil packets as the steam will be very hot. Enjoy hot!
