I love cooking, but with the school year in full swing, along with after-school activities and sports practices, our meals have been a bit repetitive.

So, I must fill you in on a secret. I am not artistic – at all. I can barely draw a stick person. Now, my daughter? She’s only nine, but she is a wonderful artist. I knew this meal idea for kids was going to be one of her favorites – what kid wouldn’t like to be allowed to play with their food before eating it?!
While these cute animal pancakes might look complicated, believe me, they are not.
As I said, I am not artistic, and I was able to come up with these guys all on my own – so believe me when I say anyone can do it. 🙂
This Bisquick recipe got a veggie boost with the addition of shredded zucchini. I encourage you to go ahead, try the zucchini.
Pancakes are the perfect meal for us time-starved moms. Even better – they are an easy recipe for kids to make either side by side you in the kitchen, or on their own for those older kiddos. Making fruit pancakes get kids cooking in no time at all!
How To Make Animal Shaped Fruit Pancakes
This family meal idea is easy to get on the table. Simply make the pancake batter, adding 1 cup of shredded zucchini. Pour batter onto hot griddle (or pan) in different sized circles and ovals. For different shapes, spray metal cookie cutters with nonstick spray and pour batter into them. Once the bottom is cooked, remove the cookie cutter with an oven mitt (they get hot!), and flip.
Fill bowls with a variety of fruit, yogurt, and breakfast meats – I used sausage and bacon. Present the plate of pancakes in different sizes and shapes along with all the toppings. Fruit Pancakes
Ingredients
- 2 cups Bisquick Pancake & Baking Mix
- 1 cup milk
- 2 large eggs
- 1 cup shredded zucchini
- 1/2 cup yogurt
- variety of fruit ideas include raspberries blueberries, cuties, strawberries, banana slices
- breakfast meats such as sausage & bacon
- nonstick cooking spray
Instructions
- Preheat griddle, spray with nonstick cooking spray before pouring pancakes.
- Make pancakes according to box instructions, adding shredded zucchini before blending.
- Pour batter onto hot griddle. Pour large and small pancakes or use cookie cutters to make a variety of shapes.
- Place fruits, yogurt, and breakfast meats into fun serving dishes. Serve alongside pancake shapes. Let your family assemble their own creations for breakfast, lunch, or dinner!
