How To Make
Place one hand on top of the chicken breast. With a sharp knife, carefully cut the chicken breast in half lengthwise. Repeat.
Pound the chicken thin
Place the chicken breasts between two pieces of plastic wrap or parchment paper. Using a kitchen mallet or rolling pin, pound or roll the chicken until it’s about 1/2 inch thick and all areas are of equal thickness. This helps tenderize the chicken and allows for even baking.
Combine the flour mix
To a large flat-bottomed bowl or pan whisk together the flour, cornstarch, 1 teaspoon seasoned salt, 1/4 teaspoon pepper, garlic powder, onion powder, and paprika.
Whisk the eggs
In another large flat-bottomed bowl or pan whisk together the eggs, 1/2 teaspoon seasoned salt, and 1/4 teaspoon pepper.
Coat the chicken
Place the chicken breast into the flour mixture. Coat in flour, shaking off the extra. Place chicken into the egg mixture. Coat well letting the extra drip off. Coat again in the flour mix. Place onto the air fryer pan. Repeat for all the chicken.
Preheat the air fryer and spray the chicken
Preheat the air fryer to 400°F. Spray the chicken cutlets with nonstick cooking spray. This helps them get golden brown.
Fry the chicken
Air fry for 5 minutes. Flip and cook for an additional 5 minutes or until the internal temperature is 165°F.
